The Cask Spigot is designed to attach to a C02 gas line by using a cask Spigot to provide a blanket of C02 over the surface of the beer inside the cask which would be lost during serving. The Cask Spigot is able to prevent air delaying the fermentation and conditioning process which causes the ale to sour.
